There are two major ski hire providers in Zermatt, Intersport and SkiSet, and between them they control the 7 most popular ski hire shops in town. For the largest choice of skis, good quality service and ease of booking online, you won’t go wrong using either of these shops.
Each shop has four levels of ski to choose from, which have their own special names, but essentially it is a choice between basic, intermediate, advanced and exclusive levels of hire. 
Both shops can also provide decent snowboard equipment. The main difference between them is that Ski Set often works out cheaper because boots are included in the price.
